Hiwaij is a spice mix used extensively in Yemeni cuisine. It is used is soups ad curries and also as a rub for meats and fish. There are different versions of this spice, I have made mine after going through numerous recipes, hence there is not any one I can attribute it to.
Ingredients
Black peppercorns – 4 tbsp
Caraway seeds – 1.5 tsp
Green cardamom seeds – ½ tsp
Black cardamom – 2 (only seeds)
Pinch of saffron
Turmeric powder – 1 tsp
Method
Using a mortar and pestle grind all spices except turmeric together to form a coarse powder.
Stir in the turmeric powder and mix well.
Store in air tight container.
